Grilled lemon herb chicken

 Here’s how to make it:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 lemons
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or basil) for garnish (optional)

  • Instructions:

    1. Start by preparing the marinade. In a small bowl, whisk together the juice of one lemon, olive oil, minced garlic, thyme, rosemary, oregano, salt, and pepper.

    2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Make sure the chicken is evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.

    3. Preheat your grill to medium-high heat.

    4. While the grill is heating up, slice the remaining lemon into thin rounds.

    5. Once the grill is hot, remove the chicken breasts from the marinade and discard any excess marinade. Place the chicken on the grill and cook for 6-7 minutes per side, or until cooked through and no longer pink in the middle. Cooking time may vary depending on the thickness of the chicken breasts.

    6. During the last few minutes of grilling, add the lemon slices to the grill and cook until they are lightly charred and caramelized.
